In Ayurveda, barley (Hordeum vulgare) is considered an excellent grain with numerous health benefits. It has been valued for its nourishing and healing properties for thousands of years. Barley is categorized as a sweet, cooling, and heavy grain, making it suitable for balancing Pitta and Kapha doshas while reducing excess heat and inflammation in the body.
BARLEY/YAVA MIX VEG Paratha
Ingredients for Yava Roti:
- 2 cups of yava flour (Barley)
- 1 tbsp flaxseed flour
- 3/4 tsp salt
- 1 tbsp pure ghee
- 1/2 cup grated carrots
- 1/2 cup shredded cabbage (Vata individuals may skip this ingredient)
- 1 cup fine chopped spinach/fenugreek leaves/fresh mint leaves/cilantro/collard greens/water cress
- 1tsp cumin lightly crushed
- 1 tsp fine coriander powder
- 1 tsp white pepper powder
- 1 tsp white poppy seeds
- 2 tsp white sesame seeds
- 1/2 cup yogurt
- 1/4 tsp dry ginger powder(best for Vata and Kapha, pitta individuals should avoid ginger and use occasionally)
- Boiling water as needed
Instructions for Barley/Yava Paratha:
- In a mixing bowl, combine the yava/barley flour, flaxseed flour, salt, spices, veggies, greens, yogurt, and pure ghee.
- Gradually add boiling water to the mixture and knead(using a spatula) it until you get a dough. Cover with a lid.The consistency may be a bit messier compared to wheat dough for making rotis.
- Allow the dough to cool down and then work with your hands to make it smooth.
- Using your hands, make rolls as with about 1 inch in diameter, and using a tortilla or puri press machine flatten the dough into thin flatbreads.
- Cook the flatbreads on a flat iron pan, flipping them to cook both sides.
- Once cooked, place the rotis on a plate and generously spread ghee over the entire surface. This step is crucial as ghee aids in digestion and enhances the absorption of nutrients present in barley.
Serve it with fresh yogurt and Subji of your choice. it also makes a wonderful travel snack item. If you have felt over, they will slightly hard next day, cut them it triangles, and use it as chips with any choice of your dip or chutneys.
