Dragon Fruit & Strawberry Lemonade

Summer is really hot here in Las Vegas, and one of the best ways to cool down is by enjoying pitaya (dragon fruit). Pitaya is the fruit of several cactus species and is naturally rich in water, making it wonderfully refreshing during the summer months. From an Ayurvedic perspective, its cooling and hydrating qualities can help pacify excess Pitta, making it a beautiful seasonal fruit for hot weather.

Here's a fun recipe we all enjoyed this afternoon!

Serving: 3

Ingredients

  • 1 fresh dragon fruit (pitaya), peeled and chopped
  • Juice of 1 fresh lemon
  • 3 tablespoons pure maple syrup (adjust to taste)
  • ¼ teaspoon fresh lemon zest
  • 1 cup chopped strawberries (about 8 fresh strawberries)
  • ½ cup frozen raspberries (optional, for extra color and a refreshing chill)
  • 24 ounces cold water

Instructions

  1. Add the chopped dragon fruit, strawberries, frozen raspberries (if using), lemon juice, lemon zest, maple syrup, and water to a blender.
  2. Blend until smooth and well combined.
  3. I strained about half of the blended purée to reduce the earthy flavor of the dragon fruit seeds, allowing the natural sweetness of the fruit to shine through. This step is completely optional and can be adjusted to your preference.
  4. Taste and adjust the sweetness if needed.
  5. Pour into glasses. 
  6. Garnish with fresh dragon fruit, sliced strawberries, and a lemon slice or a little lemon zest. We did some lemon slices, grapes and strawberries.

A naturally vibrant, cooling, and refreshing summer drink that helps keep you hydrated on hot days.

Note: The drink is more on a slightly thicker and pulpy version then watery lemonade and I feel we like it that way, more nourishing and more fresh fruit consumed by the kids.

Best Time to Enjoy

This refreshing lemonade is best enjoyed during the summer season, especially in the late afternoon, when the heat of the day is at its peak. It helps replenish fluids, cool excess Pitta, and naturally refresh the body and mind.

Ayurvedic Perspective

Dragon fruit is predominantly Madhura (sweet) in rasa, with a cooling (Śīta) virya and a sweet (Madhura) vipāka, making it especially beneficial during the hot summer season. Its hydrating nature helps nourish the body, support healthy digestion without aggravating heat, and gently pacify Pitta while being light enough for most constitutions. Strawberries contribute antioxidants and vitamin C, while fresh lemon kindles digestion in small amounts without feeling heavy. Together, these seasonal fruits create a refreshing beverage that replenishes fluids, supports natural electrolyte balance, and leaves the body feeling cool, energized, and satisfied.
